Apple Cake

Kids love making cakes and this apple based cake is a great way to ensure they are eating relatively healthy at the same time.

Ingredients

1 egg
1/2 cup (125ml) granulated sugar
1/3 cup (75ml) vegetable oil
3 tbsp (50ml) apple juice
1 tsp (5ml) vanilla
3/4 cup (175ml) all-purpose flour

1 tsp (5ml) baking powder
Pinch salt
1/3 cup (75ml) brown sugar
1 tsp (5ml) cinnamon
4 small to medium apples, peeled, cored and sliced

In medium bowl, beat egg and sugar until thick and light. Beat in oil, apple juice and vanilla. In separate bowl, whisk together flour, baking powder and salt. Add to egg mixture, stirring just until blended (batter will be thick).

In a small bowl, mix brown sugar with cinnamon. Arrange apple slices in greased 8-inch (2 litre) square metal cake pan. Sprinkle the apples with half the brown sugar mixture. Carefully spread batter over apples; smooth top. Sprinkle with remaining brown sugar mixture.

Bake in centre of 350°F (180°C) oven until cake is firm and pulls away slightly from sides of pan, 35 to 40 minutes. Cool for 10 minutes before serving.

Learning To Read

We have headed down the reading path as my daughter is starting to show interest in reading. So in order for her to learn to recognise characters and words, every time we read a book she picks a word to read from the story. Every time the word appears she will read it and each night we build upon what we learnt earlier. We write the words she has learnt in a little dictionary and review them every few days.


Key phrases like he said and she said appear in many stories and are easy for little minds to remember. I don't expect her to remember the words night after night but she enjoys seeing the words pop up again and again in new stories and it gives her a newfound confidence.

But overall it is fun for both of us and that is the most important thing of all!

Don't Discount Second Hand Stores

Investigating a new area to live, I started checking out all the stores - second hand stores included and noticed what bargains they had to offer particularly in the way of kids educational computer games and books. We managed to make some great savings and many of the books and cds were priced at $2 or less!

The Little Bear Preschool Thinking Adventure normally sells for between $10 and $15 and we picked it up for $1. A definite bargain!

We found a lot of Scholastic and Disney titles and there were purchases that kept both my daughter and I very happy.

Stores like Value Village (Canada) also have a 50% off day so it is worth popping in just to see what they may have in stock. Cheap is good but cheaper is better!
